South African Flavours Reimagined at Interlude.

At Restaurant Interlude, every menu begins with a sense of place. Surrounded by the woodland landscape of Leonardslee Lakes & Gardens, Chef Jean Delport continues to shape an experience that draws equally from the Sussex countryside and his South African heritage.

A recent feature by Jared in CPT explored this beautifully, highlighting how South African flavours and memories are being reimagined within British fine dining. The article reflects on the way Chef Jean’s upbringing, storytelling and connection to nature influence the experience at Interlude, where foraged ingredients, seasonality and layered flavour sit at the heart of every dish.

As Chef Jean says in the feature, “it’s all about layering flavors," creating menus that balance heritage with the rhythm of the estate itself.

The Philosophy Behind Interlude

A restaurant shaped not only by technique, but by emotion, memory and landscape. From South African-inspired elements woven through the tasting menu to ingredients gathered directly from the gardens, the experience remains deeply personal while celebrating the abundance of Sussex.
